Sweet, smoky and a little bit of a show off.

Brown sugar, paprika and chipotle do most of the talking, with cumin, caraway and bay filling in the background. The sugar caramelises as it roasts, so everything comes out of the oven with a sticky, golden glow.

How to use it

• Rub it over steak, chicken or pork before it hits the barbie.
• Toss it through veg or potatoes before roasting.
• Stir it into olive oil or melted butter.
• Sprinkle it over eggs or popcorn.
